Ingredients

  • 3/4 c. finely chopped onions
  • 1/3 c. butter
  • 3 c. chopped potatoes
  • 1/4 c. butter
  • 1/4 c. flour
  • 4 c. half and half or cream and milk
  • 5 cans minced clams
  • 1 large can evaporated milk
  • 1/4 tsp. black pepper
  • 1 1/2 tsp. salt
  • 1/4 tsp. rosemary

Directions

    Saute onions in butter until golden brown; add potatoes and 1 1/2 cups of water.

    Cook until tender.

    Set aside to cool.

    Add butter to flour.

    Stir in half and half, spices, clams, cooked potato mixture and evaporated milk.

    Simmer 30 to 45 minutes and add a pat of butter to each steaming mug of chowder.
