Ingredients

  • 1/4 lb. salt pork, diced
  • 2 large potatoes, diced
  • 1 onion, chopped
  • 1 qt. half and half
  • 2 cans chopped clams
  • 1 can baby whole clams
  • 1 can clam broth
  • black pepper
  • salt
  • 1 heaping tsp. flour

    Dice and fry out salt pork.

    Remove browned pieces and set aside.

    Saute and brown chopped onion in salt pork grease, then return salt pork bits to pan.

    Add flour and blend well.

    Remove from heat when thickened.

    Cook diced potatoes in clam juice, then combine with onion, flour and pork mixture over low heat.

    Add chopped clams, cream and baby clams.

    Salt and pepper to taste. Remove from low heat.

    Do not heat again until ready to eat.
