Ingredients

  • 14 cup butter
  • 2 onions, finely chopped
  • 14 cup flour
  • 4 cups milk
  • 3 medium potatoes, peeled & diced
  • 1 teaspoon thyme
  • 14 teaspoon salt (or more to taste)
  • 14 teaspoon pepper
  • 2 (5 ounce) cans clams (with juice)
  • 3 slices bacon, cooked crisp
  • 12 cup crouton (sourdough are really good)
  • 3 green onions, chopped

Directions

    Melt butter & cook onions until soft, but not brown.

    Stir in flour & cook, stirring, for 5 minutes over medium-low heat (to get rid of raw taste).

    Cool slightly & whisk in milk.

    Bring to a boil.

    Add potatoes, thyme, salt and pepper.

    Lower heat, cover & simmer for 20 minutes (until potatoes are tender).

    Add clams with juice & heat through.

    Do NOT boil.

    Taste & adjust seasoning (if necessary).

    Serve & garnish with bacon, croutons & green onions.
