Ingredients
- 14 cup butter
- 2 onions, finely chopped
- 14 cup flour
- 4 cups milk
- 3 medium potatoes, peeled & diced
- 1 teaspoon thyme
- 14 teaspoon salt (or more to taste)
- 14 teaspoon pepper
- 2 (5 ounce) cans clams (with juice)
- 3 slices bacon, cooked crisp
- 12 cup crouton (sourdough are really good)
- 3 green onions, chopped
Directions

1Melt butter & cook onions until soft, but not brown.

2Stir in flour & cook, stirring, for 5 minutes over medium-low heat (to get rid of raw taste).

3Cool slightly & whisk in milk.

4Bring to a boil.

5Add potatoes, thyme, salt and pepper.

6Lower heat, cover & simmer for 20 minutes (until potatoes are tender).

7Add clams with juice & heat through.

8Do NOT boil.

9Taste & adjust seasoning (if necessary).

10Serve & garnish with bacon, croutons & green onions.
