Ingredients

  • 2 1/2 c. sugar
  • 1/2 c. light corn syrup
  • 1/2 c. chopped nuts
  • 1/4 tsp. salt
  • 2 egg whites
  • 1 1/2 tsp. vanilla
  • 1/2 c. water

Directions

    Beat egg whites until stiff but not dry; set aside.

    Mix sugar, syrup, water and salt in a

    medium saucepan.

    Cook over medium heat, stirring until sugar dissolves.

    Continue cooking over medium heat until syrup cracks when dropped into small amount of cold water.

    Pour syrup slowly into egg whites, beating constantly, until all syrup mixture has been added to egg whites. Continue beating until the candy loses its shiny look.

    Add vanilla and nuts.

    Drop by spoonfuls onto a greased or foil-lined cookie sheet.

    Red or green food coloring may be added for Christmas.
