Classic Gazpacho

Ingredients

  • 1/2 cup fresh white breadcrumbs
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 lb ripe tomatoes, peeled, quartered, seeded
  • 8 oz cucumber, peeled, roughly chopped
  • 1 clove garlic, minced
  • None None finely chopped red onion, to garnish
  • None None green pepper, to garnish

Directions

    Combine breadcrumbs, olive oil and vinegar. Set aside to soak for 10 mins.

    In a food processor, puree soaked breadcrumbs, tomatoes, cucumber, garlic and 1 cup cold water until smooth. Season. Chill for 1 hour.

    Half-fill 4 serving glasses or bowls with ice. Pour soup over top. Serve garnished with red onion and green pepper.
