  • 2 onions peeled and finely diced
  • 1 13/16 cups carrots peeled and finely chopped
  • 3 cloves garlic peeled and finely diced
  • 2 tablespoons oil
  • 2 1/4 pounds minced beef
  • 2 tablespoons dried oregano
  • 3 5/8 cups chopped tomatoes
  • 4 1/4 cups vegetable stock
  • 7 tablespoons butter
  • 3/4 cup plain flour
  • 2 1/8 cups milk
  • 1 pinch grated nutmeg
  • 2 cups Parmesan cheese grated
  • 7 tablespoons gouda cheese grated
  • 16 sheets lasagne
  • oregano for garnish

Directions

    For the meat sauce, heat the oil in a large frying pan, and sear the beef until it becomes crumbly. Add the onions, garlic, oregano and carrots and saute briefly. Season to taste and pour in the tomatoes and 1 cup of stock. Simmer over low heat for about 10 mins.

    Preheat the oven to 400°F. For the white sauce, melt the butter in a pan, stir in the flour and heat until it begins to brown. Slowly pour in the milk and remaining stock. Simmer, stirring, for about 1 min. Add the nutmeg and season to taste.

    Pour a layer of meat sauce into a greased baking dish, followed by a layer of 4 lasagne noodles and then a layer of white sauce. Repeat the process 3 more times, finishing with a layer of white sauce. Sprinkle with the grated cheese and bake for 45-50 mins. Serve garnished with oregano.
