Clay Oven Chicken

- 1 whole Roasting Chicken, 3-4 Pound Size
- 1 Tablespoon Lemon Pepper Seasoning
- 1 Tablespoon Seasoned Salt
- 2 cloves Garlic, Smashed
- 1 whole Lemon, Small, Cut In Half
- 1 sprig Fresh Thyme (optional)
- 1 sprig Fresh Rosemary (optional)
- 3 Tablespoons Olive Oil, Divided

1Soak your clay pot in cool water for 15 minutes.

2Soak both the base and the lid.

3While pot is soaking, rinse and dry your chicken.

4Be sure to remove the giblets and neck from the cavity.

5Dont be afraid of itits dead.

6And its probably not a zombie, so it wont bite you.

8Pat the chicken dry with paper towels.

9Drain the inside as well as you can.

10I like to stuff a couple of paper towels in there to dry it.

11Just be sure to get them all out.

12Paper towel chicken is not good.

13Combine the lemon pepper and seasoned salt in a small bowl.

14Sprinkle the inside cavity with about 1 teaspoon of seasoning mixture.

15Add the garlic cloves, lemon halves, and fresh herbs (if using) into the cavity as well.

16Spread 1-1/2 tablespoons of oil on the back of the chicken.

17Spread it around with your fingers like youre giving Mr. Chicken a massage.

18Sprinkle with the outside of the chicken with half the remaining seasoning mixture.

19Drain the clay pot base and set the chicken inside, breast side up.

20Drizzle the remaining oil over the chicken and massage it in.

21Sprinkle the last of the seasoning mixture over the top.

22Drain the lid of the clay pot and put it on top.

23Place the whole thing in your oven.

24Be sure the rack is set to the lower third so theres plenty of room around the clay pot.

25Set your oven to 500 degrees F and WALK AWAY.

26Dont peek.

27Dont open the oven door.
-
28Just let it be for 90 minutes.

29After the 90 minutes is up, carefully remove the clay pot from the oven and set it on a cooling rack for about 15 minutes.

30Carefully remove the lid and use tongs to remove the chicken from the pot.

31Cut it up and serve.

32I like mine cave-man stylea leg, ripped off the bird, using no utensils.
