  • 8 liq oz/237ml heavy cream
  • .5 oz/14g finely chopped cocoa nibs
  • granulated sugar to taste

Directions

    Bring cream and nibs to boil.

    Remove from heat and cover for 20 minutes.

    Strain cream, pressing on solids to extract liquid.

    Discard nibs.

    Chill cream until cold enough to whip.

    Whip w/ sugar to taste.
