- 1 whole egg
- 1 egg white
- 1 tablespoon sugar
- 1/2 teaspoon vanilla
- 1 tablespoon cocoa powder
- 1 cup sliced almonds, slightly crushed
- 3/4 cup shredded sweetened coconut
Directions

1Preheat the oven to 350F.

2Line a baking sheet with parchment paper and set aside.

3In a bowl, whisk together the egg, egg white, sugar, and vanilla until smooth and the sugar is dissolved.

4Add the cocoa powder and whisk vigorously until the batter is smooth.

5Stir in the almonds and coconut until well combined.

6Use a mini ice cream scoop or spoon to drop 12 tablespoon-size mounds onto the baking sheet.

7Bake until they begin to brown, 10 to 12 minutes.

8Let the cookies cool for 5 minutes on the pan before transferring to a rack to cool completely.
