- 12 cup shortening (I always use butter) or 12 cup butter (I always use butter)
- 1 cup white sugar
- 1 12 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 ripe bananas
- 12 cup pecans or 12 cup walnuts
- 12 cup unsweetened coconut
Directions

1Preheat oven to 325 degrees F (165 degrees C).

2Lightly grease an 8x4 inch loaf pan.

3In a large bowl, cream the shortening and sugar.

4Sift in the flour, baking soda coconut, pecans or walnuts and salt.

5Blend in the mashed bananas.

6Pour batter into prepared pan.

7Bake in preheated oven for 60 minutes, or until a knife inserted into center of loaf comes out clean.
