- 1 cup coconut unsweetened, toasted
- 2 cups flour, all-purpose
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup sugar
- 1 each eggs beaten
- 1/4 cup vegetable oil
- 1 cup milk
- 1 teaspoon vanilla extract
Directions

1Preheat oven to 350F (180C).

2Mix coconut, flour, baking powder, salt and sugar.

3In separate bowl, mix egg, oil, milk, and vanilla.

4Add wet mixture to dry mixture and still until blended.

5Pour into greased and floured loaf pan and bake one hour.
