  • 1 cup coconut unsweetened, toasted
  • 2 cups flour, all-purpose
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1 each eggs beaten
  • 1/4 cup vegetable oil
  • 1 cup milk
  • 1 teaspoon vanilla extract

Directions

    Preheat oven to 350F (180C).

    Mix coconut, flour, baking powder, salt and sugar.

    In separate bowl, mix egg, oil, milk, and vanilla.

    Add wet mixture to dry mixture and still until blended.

    Pour into greased and floured loaf pan and bake one hour.
