  • 2 c. sugar
  • 1 c. Crisco
  • 1 c. sweet milk
  • 3 c. self-rising flour
  • 2 tsp. coconut extract
  • 2 tsp. baking powder
  • 1/2 tsp. soda
  • 5 egg yolks and whites, separated

Directions

    Cream Crisco and sugar; add egg yolks, milk and flour (with soda and baking powder).

    Mix well and add coconut extract.

    Fold in stiffly beaten egg whites.

    Bake in 350° oven until done. Let stand for 10 minutes, then turn out on cooling racks.

    Use coconut milk with 1 cup sugar, boiled together.

    Add coconut and cool slightly; spread between layers.

    Spread with Divinity Icing, top and sides.

    Better made 2 days before serving.
