- 3 c. sifted cake flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 c. butter (substitution)
- 1 lb. confectioners sugar
- 4 egg yolks, well beaten
- 1 c. milk
- 1 tsp. vanilla
- 1 c. coconut
- 4 egg whites, well beaten
Directions

1Sift flour once, then measure.

2Add baking powder and salt; sift 3 times.

3Cream butter thoroughly and add sugar gradually. Continue creaming until light and fluffy.

4Add egg yolks.

5Add flour mixture alternately with milk, beating after each addition. Stir in vanilla and coconut.

6Fold in egg whites carefully.

7Bake in a greased 8-inch pan at 350° for 30 minutes.
