- 1 1/2 Tbsp. butter, softened
- 2 2/3 c. coconut
- 4 eggs
- 2/3 c. sugar
- 1 (8 oz.) pkg. cream cheese
- 3 Tbsp. lemon juice
Directions

1Spread butter evenly over bottom and sides of 9-inch pie pan. Press 1 1/3 cups coconut into butter, forming a shell.

2Mix 1 cup coconut, the eggs, sugar, cheese and lemon juice.

3Blend until smooth, about 1 1/2 minutes.

4Pour into coconut shell.

5Sprinkle remaining coconut in a ring around top and in center.

6Bake at 325° for 30 minutes.

7Refrigerate any leftovers.
