Coconut Chess Pie

  • 4 eggs
  • 2 c. sugar
  • 1/2 c. (1 stick) Mrs. Filbert's margarine
  • pinch of salt
  • 1 tsp. vanilla
  • 1 (7 oz.) can Baker's Angel Flake coconut

Directions

    Beat eggs and sugar well with a fork.

    Add margarine, salt, vanilla and coconut.

    Pour into two uncooked pie shells.

    Bake 35 minutes at 375°.

    I heat the oven to 425° and put the pies in. Turn back to 375°.

    I think the hot oven sets the crust and filling.
