Coconut Chia Seed Pudding

  • 8 Tablespoons Chia Seeds
  • 2 cups Coconut Milk Drink
  • 1 teaspoon Vanilla
  • 1 pinch Salt
  • 1/2 teaspoons Cinnamon
  • 2 Tablespoons Coconut Shavings
  • 1/3 cups Coconut Yogurt
  • 1 Tablespoon Agave Syrup, Plus More To Taste If Desired
  • 1/2 whole Mango

Directions

    Pour chia seeds into the coconut milk drink (not the thick kind from a can but a coconut drink). Cover the bowl with a towel and leave in the fridge overnight, or a minimum of 2 hours.

    Mix seeds. Add vanilla, salt, cinnamon and mix again. (To make it sweeter, add a little bit of agave syrup.)

    Toast coconut shavings in a frying pan. Mix yogurt with agave syrup. Cut mango into cubes.

    Place chia pudding in a glass. Add some fried coconut shavings. Add chopped mango, yogurt and remaining coconut shavings on top. Enjoy!
