Coconut Corn Squares

Ingredients

  • 1 cup plain flour
  • 1 cup yellow cornmeal
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 cup milk
  • 90 g butter, melted
  • 1 cup coconut

Directions

    Sift flour, cornmeal, sugar, baking powder, salt and cinnamon together in a large bowl.

    Break eggs into a smaller bowl, add milk and melted butter.

    Add coconut and stir till well combined.

    Make a hole in the centre of flour.

    Pour in milk/coconut mixture.

    Stir till just combined.

    Grease a shallow 20 cms square tin.

    Spoon in the batter.

    Bake at 200 C for about 35 minutes.

    Cool on wire rack and cut into 9 large squares.

    Serve with butter and jam.
