- 1 cup plain flour
- 1 cup yellow cornmeal
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 eggs
- 1 cup milk
- 90 g butter, melted
- 1 cup coconut
Directions

1Sift flour, cornmeal, sugar, baking powder, salt and cinnamon together in a large bowl.

2Break eggs into a smaller bowl, add milk and melted butter.

3Add coconut and stir till well combined.

4Make a hole in the centre of flour.

5Pour in milk/coconut mixture.

6Stir till just combined.

7Grease a shallow 20 cms square tin.

8Spoon in the batter.

9Bake at 200 C for about 35 minutes.

10Cool on wire rack and cut into 9 large squares.

11Serve with butter and jam.
