Coconut Cream Pie

- 1/2 c. sugar
- 5 Tbsp. flour
- 1/8 tsp. salt
- 1/4 c. cold milk
- 3 egg whites
- 1 1/2 c. milk, scalded
- 3 egg yolks
- 1 tsp. vanilla
- 1 c. shredded coconut
Directions

1Blend sugar, flour and salt with the cold milk.

2Add scalded milk while stirring constantly.

3Cook slowly until thick.

4Add beaten egg yolks and cook two minutes longer.

5Remove from heat and add vanilla and coconut.

6Mix well; cool and pour into baked pie shell.

7Cool until ready to serve, then whip egg whites until stiff.

8Spread on pie and bake in hot (425°) oven until light brown, approximately 5 minutes.
