- 1/4 c. cornstarch
- 2/3 c. sugar
- 1/2 tsp. salt
- 2 1/2 c. milk
- 3 eggs, separated
- 1 tsp. vanilla
- 1 c. coconut
- 6 Tbsp. sugar
Directions

1Mix dry ingredients with milk.

2Cook over boiling water.

3Stir continuously until thick. Cover and cook 10 minutes.

4Stir in hot mixture and egg yolks.

5Cook 2 minutes. Stir in coconut and vanilla. Cool to room temperature.

6Beat egg whites.

7Add sugar. Beat until fluffy.
