Coconut Cream Pie

Ingredients

  • 1 c. sugar
  • 2 Tbsp. cornstarch (more if needed)
  • 4 eggs, separated
  • 1/2 stick margarine, melted
  • 1 c. milk
  • 1 tsp. vanilla
  • 16 oz. pkg. fresh frozen coconut
  • 4 egg whites, room temperature
  • 1/4 tsp. cream of tartar
  • 8 Tbsp. sugar

Directions

    Mix all but the last 3 ingredients and blend well.

    Pour into 9-inch baked pie shell.

    Beat egg whites and cream of tartar in a small mixing bowl until foamy.

    Gradually add 8 tablespoons sugar, beat until stiff peaks form.

    Spread meringue onto hot pie filling, carefully sealing meringue to edge of crust.

    Bake in preheated 350° oven about 15 minutes or until lightly browned. Cool to room temperature.
