Coconut Cream Pie

- 1 c. sugar
- 3 Tbsp. flour
- 3 Tbsp. water
- 2 c. whole milk
- 3 eggs, separated
- 1/3 stick margarine
- 1 tsp. vanilla
- 1 c. coconut
Directions

1In saucepan, mix 1 cup sugar, flour and water.

2Stir until moistened.

3Add 2 cups milk and 3 egg yolks.

4Place on stove and cook until thick, stirring constantly.

5When thickened, add margarine, vanilla and coconut.

6Cool.

7Pour into baked and cooled pie shell.

8Beat 4 egg whites with dash of cream of tartar until peaks form.

9Add 3 tablespoons sugar.

10Beat until stiff.

11Put on top of pie.

12Bake at 325° until brown.
