  • 2 tbsp vegetable oil
  • 1 lb frozen corn, thawed
  • 1/2 tsp salt
  • 3 sliced scallions, (white and green parts)
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1 tbsp cider vinegar
  • 1/2 cup fresh cilantro leaves

Directions

    Heat vegetable oil in a large skillet over medium heat.

    Add corn kernels, scallions, salt and red pepper flakes.

    Cook until softened, about 5 minutes.

    Add coconut milk and water and simmer until thickened, about 5 minutes.

    Remove from the heat and stir in cider vinegar and cilantro leaves.
