Coconut Crumble Mousse

  • 1 1/3 cups cookies coconut
  • 1 11/16 cups milk
  • 1 package cheese curds
  • 6 3/4 tablespoons condensed milk
  • shredded coconut to garnish

Directions

    Grind the coconut cookies in a food processor or blender, and set them aside.

    In a saucepan, heat 300 ml. of milk for approximately 3 minutes over medium heat.

    Melt the cheese curds and the remaining 100 ml. of milk in a separate saucepan, stirring frequently with a whisk. Set it aside.

    Add crushed cookies to the 300 ml. of milk and whisk well over medium heat.

    Add the milk with the melted cheese curd and the condensed milk, and cook for just under 10 minutes over low to medium heat, stirring constantly with a whisk.

    Place the mousse in separate bowls, and let cool in the refrigerator until serving time, garnished with the shredded coconut.
