Coconut Curry With Shrimp

  • 1 tablespoon olive oil
  • 1 onion small, chopped
  • 1 garlic clove minced
  • 1/2 green chili seeded and shredded
  • 1 teaspoon curry powder
  • 7/8 pound prawns or shrimp
  • 1 11/16 cups coconut milk
  • 3 limes juice
  • 1 tablespoon grated coconut
  • salt to taste
  • ground black pepper to taste
  • 1 sprig coriander chopped

    In a large pot, heat the oil.

    Add onion and minced garlic, saute for a few minutes.

    Add chili and curry powder, continue cooking for a few minutes over low heat.

    Add the prawns or shrimp, cover with coconut milk.

    Cook for about 10 minutes.

    Add lime juice and coconut, stirring constantly.

    Season with salt and pepper, remove from heat.
