Coconut Layer Pudding

  • 6 14 cups coconut milk
  • 1 12 cups sugar
  • 14 teaspoon salt
  • 2 14 cups rice flour
  • 34 cup cornflour
  • 34 teaspoon red food coloring

    Pour coconut milk into saucepan; warm over low heat.

    Add sugar and salt; stir until dissolved.

    Stir in rice flour and corn flour; mix well.

    Filter batter through a fine strainer.

    Divide mixture into 2 equal portions.

    Add red food coloring to one portion.

    Pour mixture into greased, heated tin to steam into 9 layers of alternating colors, starting with a red layer.

    Allow 10-15 minutes cooking time per layer.
