- 6 14 cups coconut milk
- 1 12 cups sugar
- 14 teaspoon salt
- 2 14 cups rice flour
- 34 cup cornflour
- 34 teaspoon red food coloring
Directions

1Pour coconut milk into saucepan; warm over low heat.

2Add sugar and salt; stir until dissolved.

3Stir in rice flour and corn flour; mix well.

4Filter batter through a fine strainer.

5Divide mixture into 2 equal portions.

6Add red food coloring to one portion.

7Pour mixture into greased, heated tin to steam into 9 layers of alternating colors, starting with a red layer.

8Allow 10-15 minutes cooking time per layer.

9Leave to cool.

10Cut in diamond shaped pieces.
