Coconut Loaf

- 2 c. self-rising flour
- 1 c. freshly grated coconut
- 1/2 c. sugar
- coconut milk (enough to make batter moist)
Directions

1Mix all ingredients together.

2Pour into a greased and floured loaf tin.

3Bake for 30 to 40 minutes.

4Test after 30 minutes by inserting a toothpick into loaf. If toothpick comes out clean, it is done. Do not overbake or it will be crumbly.

5Serve as any hot fresh bread, sliced with butter and/or jam.
