- 3 egg whites, at room temperature
- 1/2 c. sugar
- 1 tsp. vanilla
- 1/2 tsp. salt
- 2 c. flaked coconut
- 1/3 c. all-purpose flour
Directions

1Preheat oven to 325°.

2Lightly grease 2 cookie sheets.

3In small bowl, with mixer at high speed, beat egg whites until soft peaks form.

4Beating at high speed, gradually beat in sugar, 2 tablespoons at a time, beating well after each addition until sugar is completely dissolved.

5Beat in vanilla and salt.

6(Whites should stand in stiff, glossy peaks.)

7With rubber spatula, gently fold coconut and flour into egg white mixture.
