Ingredients

  • 2 1/2 c. coconut (unsweetened)
  • 3/4 c. cashew meal
  • 1 c. barley or rice flour
  • 1/3 c. raw honey
  • 3/4 c. distilled water
  • 1/2 tsp. sea salt
  • 1 tsp. almond flavoring

Directions

    Combine all dry ingredients into mixing bowl.

    Mix well.

    Add water, honey and flavoring into dry ingredients and mix thoroughly.

    Roll into balls and press with a fork.

    Spray cookie sheet with Pam and place cookies on it.

    Bake at 350° for 15 minutes.

    Yields 24 cookies.
