- 3 c. moist shredded coconut (8 oz.)
- 1 tsp. vanilla or almond extract
- 1/8 tsp. salt
- 2/3 c. sweetened condensed milk
- 1 or 2 stiffly beaten egg whites
- chocolate
- confectioners sugar
Directions

1Preheat oven to 350°.

2Have the coconut ready in a bowl.

3Add the vanilla or almond extract and salt.

4Combine these with the sweetened condensed milk.

5Make a thick paste.

6These are much improved by folding into the batter the stiffly beaten egg whites. Roll into balls, or drop by teaspoon onto a well-greased cookie sheet.

7Bake for 8 to 10 minutes, until lightly browned around edges.
