- 1 envelope unflavored gelatin
- 1/3 c. cold water
- 1/2 c. sugar
- 2/3 c. white Karo
- 1 tsp. vanilla
- 3 c. grated coconut
Directions

1Toast the coconut until it is light brown.

2Soften the gelatin in cold water in the top of a double boiler.

3Place over boiling water and stir unti the gelatin is dissolved.

4Add sugar and stir until it is dissolved.

5Remove it from heat.

6Pour the syrup into a large bowl and add the vanilla and gelatin mixture.

7Beat on highest speed with a mixer until marshmallow consistency, about 15 minutes.

8Grease a 7 x 10 x 1 1/2-inch pan.

9Put coconut in the bottom of the pan.

10Pour the marshmallow over it and cool.

11Cut into squares and roll in coconut until all sides are covered.
