Coconut-Pecan Pie

- 3 eggs
- 3/4 c. sugar
- 1/2 c. margarine, melted
- 2 tsp. lemon juice
- 1 tsp. vanilla extract
- 1 1/4 c. flaked coconut
- 1/2 c. coarsely chopped pecans
- 1 (9-inch) unbaked pastry shell
Directions

1In mixing bowl, beat eggs; add sugar, margarine, lemon juice and vanilla.

2Mix well.

3Stir in coconut and pecans.

4Pour into pie shell.

5Bake at 350° for 45 to 50 minutes or until set.

6Cool completely.

7Store in refrigerator.

8(The recipe called for 1 1/2 cups sugar, but I use 3/4 cup of sugar.)
