Coconut Pie

  • 1 stick margarine, melted
  • 1 (14 oz.) pkg. flaked coconut
  • 2 eggs
  • 1 tsp. cornstarch
  • 1 c. sugar
  • 1 tsp. vanilla
  • 1 1/2 c. milk
  • 2 regular (8-inch) or 1 deep dish (9-inch) unbaked pie shell

Directions

    Mix together the sugar and cornstarch.

    Add the eggs, margarine, 1 3/4 cups coconut, 1 1/4 cups of milk and vanilla. Stir well.

    Pour mixture into pie shell(s).

    Add additional milk and coconut (sprinkle over and gently mash down into mixture) to finish filling the shell(s) to 3/4-inch from the top.

    Bake at 325° for 45 minutes or until golden brown.
