- 1 stick margarine, melted
- 1 (14 oz.) pkg. flaked coconut
- 2 eggs
- 1 tsp. cornstarch
- 1 c. sugar
- 1 tsp. vanilla
- 1 1/2 c. milk
- 2 regular (8-inch) or 1 deep dish (9-inch) unbaked pie shell
Directions

1Mix together the sugar and cornstarch.

2Add the eggs, margarine, 1 3/4 cups coconut, 1 1/4 cups of milk and vanilla. Stir well.

3Pour mixture into pie shell(s).

4Add additional milk and coconut (sprinkle over and gently mash down into mixture) to finish filling the shell(s) to 3/4-inch from the top.

5Bake at 325° for 45 minutes or until golden brown.
