- 1/2 c. sugar
- 1/4 tsp. salt
- 3 eggs, separated
- 2 Tbsp. butter
- 9-inch pie crust, baked
- 1/2 tsp. cream of tartar
- 1/4 c. flour
- 2 c. milk
- 1 tsp. vanilla
- 1 c. coconut
- 1/4 c. sugar
Directions

1Place sugar, flour and salt in double boiler.

2Add milk.

3Stir over heat until thickened, like pudding.

4Add egg yolks; cook 3 to 4 minutes more.

5Remove from heat.

6Add vanilla, butter and coconut.

7Pour into pie shell.

8Beat egg whites on high speed until they form stiff peaks.

9Gradually add sugar and cream of tartar while beating.

10Spread meringue over pie; sprinkle with coconut.

11Bake at 350° until peaks and coconut brown.
