  • 2 c. sugar
  • 2 c. plain flour
  • 1 Tbsp. coconut extract
  • 5 eggs
  • 1 c. buttermilk
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 can Angel flake coconut

Directions

    Cream shortening. Add sugar gradually. Add eggs one at a time. Sift together dry ingredients and add alternately with buttermilk. Bake in stem cake pan 1 hour at 350°.
