Coconut Pound Cake

- 1 1/2 c. shortening
- 2 1/4 c. sugar
- 5 eggs
- 3 c. sifted cake flour
- 1/4 tsp. salt
- 1 c. milk
- 1 (7 oz.) c. flaked coconut
Directions

1Beat shortening at medium speed.

2Gradually add sugar, beating well after each addition.

3Combine flour and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.

4Mix just until blended after each addition.

5Stir in coconut.

6Pour in greased and floured 10-inch tube pan.

7Bake at 325° for 1 hour and 25 minutes, or until toothpick comes out clean.

8Let stand 15 minutes.

9Remove from pan, cool on wire rack.
