  • 1 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1 Tbsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 15 Kellogg's Frosted Mini-wheats cereal, crushed to measure 1 1/3 cup
  • 1/4 c. milk
  • 1 c. pumpkin
  • 1 tsp. vanilla
  • 1/2 c. shortening
  • 1/2 c. brown sugar
  • 1 egg

Directions

    Stir together flour, baking powder, soda, salt, cinnamon and nutmeg.

    Set aside.

    In a medium bowl, stir crushed cereal, milk, pumpkin and vanilla.

    Let stand for 15 minutes.

    Meanwhile, in another bowl, beat shortening and brown sugar until light and fluffy.

    Add egg and beat well.

    Stir in pumpkin mixture and add flour mixture.
