- 78 cup coconut milk
- 3 limes, juice of
- 12 ounces basmati rice, washed
Directions

1Place the rice in a saucepan with the limejuice and coconut milk.

2Add enough water to just cover the rice and bring to the boil.

3Simmer for 5 minutes.

4Place the lid tightly over the pan and leave for 15 minutes.

5Fluff with a fork and serve immediately.
