Coconut Squash Pie

  • 3 c. yellow squash, cooked and drained well
  • 3 eggs
  • 2 c. sugar
  • 1 stick margarine, melted
  • 1 large can evaporated milk
  • 3 tsp. flour
  • 1 tsp. vanilla
  • 1 small can coconut
  • 2 (9-inch) unbaked pie shells

Directions

    Mix all ingredients together well.

    Pour into unbaked pie shell and cook for 20 minutes.

    Sprinkle coconut on top of pie and cook 15 minutes more.

    Bake at 350° for 20 minutes.
