Coconut Stuffed Peaches

- 4 fresh peaches
- 4 ounces sugar
- 2 ounces butter
- 2 ounces desiccated coconut
Directions

1Cut peaches in half and remove the stones.

2Place in a pan with half the sugar.

3Barely cover with water, bring to the boil and poach for 5 minutes.

4Preheat the BBQ grill to hot.

5Blend the butter, sugar and coconut together.

6Remove the peaches from the pan and place in a shallow flameproof dish.

7Place the coconut mixture in the centre of each peach and grill for a few minutes.

8Serve hot.
