Coconut Yellow Layer Cake

- 2 sticks butter
- 2 c. sugar
- 4 eggs
- 3 c. sifted flour
- 2 tsp. baking powder
- pinch of baking soda
- 1 c. nonfat buttermilk
- 1 tsp. vanilla
- shredded coconut
Directions

1Cream butter until very light in color.

2Gradually add sugar. Add eggs, one at a time, until well mixed.

3Sift flour, baking powder and soda together.

4Add flour alternately with buttermilk to butter mixture.

5Add vanilla.

6Fold in with a large spoon. Pour into 3 (9-inch) greased and floured cake pans.

7Bake at 375° for about 20 minutes.

8Let layers cool completely before frosting. Use the recipe for Lemon Frosting to frost this cake.

9When cool and icing is made, spread on layers and sprinkle on coconut.
