Ingredients

  • 6 (6 oz.) frozen cod or scrob fillets
  • 5 Tbsp. margarine
  • 1 1/2 c. sliced carrots (rounds)
  • 2 1/4 c. potatoes, sliced
  • 1 1/2 c. onions, largely diced
  • 3/4 c. celery, sliced
  • 3/4 c. green pepper, chopped
  • 2 tsp. salt or to taste
  • 1 1/2 tsp. oregano
  • 1/2 tsp. pepper
  • 3 Tbsp. white wine (optional)
  • 2 1/2 c. water

Directions

    Partially thaw fish fillets.

    Cut into large chunks.

    Saute carrots and potatoes in margarine approximately 5 minutes in heavy pot.

    Add remaining vegetables and seasonings. Simmer 3 minutes longer.

    Add wine, water and fish.

    Ladle into 6 ovenproof bowls and bake in preheated 400° oven for 5 to 8 minutes.
