  • 4 cod fillets 150g each
  • 4 Hellmann's Mayonnaise with a Zing of Lemon dollops*
  • 2 courgettes
  • 1 5/8 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon thyme

Directions

    Preheat the oven to 170°C.

    Place the cod in an oven tray, add the cherry tomatoes with half of the thyme and olive oil.

    Bake at 170° C in a fan oven for about 20 minutes.

    Mix the chopped courgettes with the olive oil and rest of the thyme and stir fry for 5 minutes. Simmer until cooked.

    Serve with Hellmann's Mayonnaise with a zing of Lemon
