- 4 cod fillets 150g each
- 4 Hellmann's Mayonnaise with a Zing of Lemon dollops*
- 2 courgettes
- 1 5/8 cups cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon thyme
Directions

1Preheat the oven to 170°C.

2Place the cod in an oven tray, add the cherry tomatoes with half of the thyme and olive oil.

3Bake at 170° C in a fan oven for about 20 minutes.

4Mix the chopped courgettes with the olive oil and rest of the thyme and stir fry for 5 minutes. Simmer until cooked.

5Serve with Hellmann's Mayonnaise with a zing of Lemon
