Cod with Oranges and Green Olives

- 2 tablespoons olive oil
- 1/2 red onion, thinly sliced
- 3/4 cup white wine
- 3 tablespoons orange juice
- 1 pound cod fillets
- 1 orange, peeled and coarsely chopped
- 1/2 cup pitted cured green olives
Directions

1In a large skillet heat oil over medium high heat.

2Stir in red onion and cook for 2 minutes.

3Stir in wine and orange juice and bring to a rapid boil.

4Reduce heat and simmer for two minutes.

5carefully add cod fillets and season with salt and pepper.

6Cover and cook for 2 to 3 minutes.

7Stir in chopped orange and green olives.

8Serve hot with parsley-buttered rice.
