- 1 tbsp chopped garlic
- 2 tbsp olive oil
- 3 or 4 fresh tomatoes chopped
- 1 cup chopped mushrooms
- Salt and pepper
- Parsley
- Rosemary
- Oregano
- 2 tbsp butter
- 1 -2 cups plain bread crumbs
- 6 cod fish fillets
Directions

1In a pan saute olive oil and garlic.

2Then add chopped tomatoes and mushrooms.

3Season with salt and pepper, and parsley.

4Finish cooking and put aside. Season bread crumbs with rosemary, oregano, salt and pepper and butter.

5Lay cod flat and season both ends with a bit of salt and pepper.

6Top first with the tomato and mushrooms you sauteed, then top again with bread crumbs.

7Bake at 350 for 15-20 min.
