- 2 c. flaked, cooked fish (cod or other firm fish)
- 1 c. cooked rice
- 2 tsp. dried parsley flakes
- 1/2 tsp. seasoned salt
- 1/4 tsp. onion salt
- 1/4 tsp. lemon pepper
- 2 eggs, beaten
- 1/2 c. fine saltine cracker crumbs
- shortening for deep frying
Directions

1Combine fish, rice, parsley, seasoned salt, onion salt and lemon pepper.

2Add eggs and mix well.

3Using 2 level tablespoons of mixture, firmly press into balls.

4Roll in crumbs, keeping balls round.

5Heat shortening to 365° and fry several balls at a time for 3 1/2 minutes or until brown.

6Drain on paper towels. Makes 4 to 6 servings.
