- 2 Tbsp. Crisco oil
- 1/2 lb. fresh okra, cut
- 1 medium onion, sliced
- 2 garlic cloves, minced
- 1 large zucchini, sliced
- 1 (28 oz.) can tomatoes
- 1 1/2 c. frozen corn
- 1/4 tsp. black pepper
- 1/8 tsp. cayenne pepper
- 1 1/2 lb. cod steaks
- hot cooked rice
Directions

1Heat Crisco oil in large saucepan; add okra.

2Saute on medium heat for 2 minutes; add onion and garlic.

3Saute 5 minutes.

4Add zucchini and undrained tomatoes; heat on low for 5 minutes; add corn, black pepper and cayenne.

5Lay cod steaks on top of vegetable mixture, spooning mixture over them.

6Cook gently 5 to 10 minutes or until the fish is done.

7Serve over hot rice.
