Ingredients
- 1 Tbsp. dry yeast
- 1/2 tsp. ginger
- 1/2 c. warm water
- 3 Tbsp. sugar
- 1 (13 oz.) can evaporated milk
- 1 tsp. salt
- 2 Tbsp. oil
- 4 to 5 c. flour
Directions

1Dissolve yeast in warm water in large bowl.

2Add ginger and 1 tablespoon of sugar.

3Let stand 15 minutes.

4Add rest of sugar, salt, oil and evaporated milk.

5Add flour gradually until dough is heavy and not sticky.

6Knead on a floured board for 5 minutes. Divide and place into two greased one-pound coffee cans or one 2 pound can. Put lids on.

7Let rise in warm place until dough pushes against top.

8Remove lids and bake in a 350° oven until done (1 pound can equals 45 minutes; 2 pound can equals 1 hour).

9If top gets too brown while baking, drape foil over top.

10Brush with butter for soft crust.
