  • 1 Tbsp. instant coffee
  • 1 c. boiling water
  • 2 c. flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 6 egg whites
  • 1/2 tsp. cream of tartar
  • 1/2 c. sugar
  • 6 egg yolks
  • 1 1/2 c. sugar
  • 1 c. pecans, finely ground

Directions

    Dissolve together the coffee in the boiling water.

    Cool. Sift together the flour, baking powder and salt.

    Beat the egg whites with the cream of tartar. Add 1/2 cup sugar to egg whites, 2 tablespoons at a time. Set aside.
