- 1 1/2 lb. potatoes, peeled
- 1 1/2 c. milk
- 6 scallions
- 1 1/2 c. boiled green cabbage or curly kale
- 1 Tbsp. butter
- 1 Tbsp. chopped parsley
- pepper and salt
Directions

1Boil the potatoes and mash.

2Add milk and scallions (should be scalded to keep tops green) and beat until fluffy.

3Toss the cooked cabbage (finely chopped) gently in the melted butter.

4Add to the potatoes, together with parsley.

5Fold well.

6Salt and pepper to taste.
