  • 12 small to medium potatoes, boiled with skins (don't overcook)
  • 3 tsp. salt
  • 1 Tbsp. sugar
  • 1/2 c. oil
  • 1 onion, thinly sliced
  • 1/2 c. vinegar
  • 1/2 to 1 c. chopped fresh parsley

Directions

    Combine all ingredients except potatoes. After potatoes are cooked and cooled, peel and slice. Add to dressing and stir slightly. Let stand for at least 8 hours or overnight.
